Poppy seed Angel food Cake with Blueberries and Strawberries stewed in red wine

Number of Servings - 4-6

Angel Food Cake:

• 5 Tablespoons cake flour
• ¾ cup sugar plus 2 tablespoons
• ½ cup egg whites (4 –5 eggs)
• ½ teaspoon cream of tartar
• Pinch salt
• 1-Tablespoon poppy seeds
• 1 ½ teaspoons lemon zest

Stewed Berries:

• 1 cup blueberries
• 1 cup strawberries
• ¼ cup honey
• ½ cup red wine

Sift Cake flour and 2 tablespoon sugar and set aside.

Whip egg whites and cream of tartar until it forms soft peaks. Slowly add sugar and salt and continue to whip until stiff peaks form. Fold in flour mix. Fold in Poppy seeds and lemon zest. Pour into sprayed cake pan and bake in a preheated 350-degree oven for about 15 to 20 minutes or until slightly golden brown. Cool.

Bring Wine and honey to a simmer in a medium saucepan and cook for about 4 minutes. Add Berries and cook for another 4 minutes.
